Rainy days ... Soup

Today was a rainy day. I love rainy days, they always make me smile! I like to stay home and listen to classical music or himns, and cook while hearing to the rain hit the glass of the windows. I always want to eat something that makes me feel warm and happy, but today i wasnt sure about what to eat. After thinking alot, i decided to make a soup with my favorite vegetables! I heated it to a good temperature and it made me feel so cozy and comfortable!

I felt i needed to have something else, so i decided to make a quesadilla with cottage cheese. I cooked some of the cheese and added some salt and pepper. Which i love to do because I feel it gives it a different and better flavor to the cheese.
On a relaxed day like today, it was a simple and light food to make and enjoy




Let me share with u my soup, this is what u will need to make it:

2 cups chopped italian pumpking
1/2 cup corn kernel
1/2 peas
1/2 chopped carrots
pinch of salt and pepper
olive oil
epazote
--- for sauce ---
2 tomatoes
1 garlic clove (big)
1/4 of an onion (yellow or white)
*i used yellow
Mix all this in the blender and set aside (we will use it later)

1. in a tall pan fill it with water to the half , add one tsp of salt put in the stove and let it get warm .
(about the salt , you can check if you need more or less salt that is my advice but every tongue is different so well you decide how much to use, just try to dont use so much or the flavor of the vegetables will be lost and will taste all to salt)
2. now add the rest of the ingredients , pumpking , carrots, etc...
3. when everything is in the pan add the tomatoe sauce we made earlier .
4. cover the pan and let it boil .
now... just sit down and enjoy the soup :)

White Bread

 


To make this recepie you will need:
2 cups warm water (110 degrees or 45 celcius)
2/3 white sugar
1 1/2 tsp active dry yeast
1 1/2 teaspoon salt
1/4 cup vegetable oil
6 cup bread flour

1. in a large bowl, disolve the sugar in warm water and then stir in yeast resembles a creamy foam.
2. mix salt and oil into the yeast , mix in flour one cup at a time , knead dough on a lighty floured surface until smooth , place in a well oiled bowl , and turn dough to coat , cover with a damp cloth , allow to rise until double in bulk about an hour.
3. puch dough down , knead for a few min and divide in half , shape into loaves , and place into two well oiled 9x5 inches loaf pans. Allow to rise for 30 min or until dough has risen 1 inch above pans.
4. BAKE !! to 350 degrees or 175 celcius for 30 min

DONE ! you will have a really cool bread to share with you family !

NOTE :instead of sugar you can use some honey and put some honey on the top with some oats, will taste great i know !

Hi my dear readers , today i want to show you my work ,i have start to work in our future food storage, i have found good deals in the store ! days ago i just found tomatoes really cheap 1 pound for 4 cents ! was great , they look so beautiful , shape , color and all they are great , so i decide to do this with them , i recomend to everyone of you , you can do it in home too for ur family , is good to have a provident living and this is part of it , and u can be saving alot of money.
Since i got my tomatoes i made tomatoe juice , i put it in jars (so when they get expensive i wont need to buy ,i can just find them in my food storage) the good part of all of this is that u just can do it with healthy food like vegetables and fruits , and forget about junk food ! start to do it !

monkey cake !

it was a beautiful night and we wanted something to eat , something fast but with good flavor ! something easy to make and easy to share so we decide to make Monkey cake , but my boyfriend keep saying baby stew.... i still love him haha ! and he say ... i better ! :)


4 cans Buttermilk Biscuts
1 3/4 cups Sugar (Divided)
2 Tbls. Cinnamon
1 1/2 sticks butter (good quality! alwasy will give a better flavor ;))
1/4 cup Brown Sugar

Pre-heat oven at 350 degrees F.
Mix 1 cup sugar and 2 Tbls. of cinnamon.
Cut uncooked biscuits into 1/4 pieces.
Dip 1/4 sections into sugar/cinnamon mix.
Place dipped sections into greased tube pan.
Pour remaining sugar/cinnamon mix on top.
Melt 1 1/2 sticks butter, add 3/4 cup sugar and 1/4 cup brown sugar.
Bring to a light boil. Pour over biscuit sections in pan.
Bake at 350 degrees F. for 40-45 min. Immediatly remove from pan to plate.
Once cake is on the plate and it cools for about 5-10 minutes, you can start picking at the cake.
The pieces will just come off, no need for cutting!

making pizza !!

days ago i wanted to eat pizza ...usually i call to order one,but i wanted homemade pizza , i was pretty tired that night but i decided to make one !
I hope you can enjoy my recipe and tell me what you think about it :)
so lets start!
for this recepie you will need:
1 cup of warm water (105F)
3 1/2 cups of all-purpose flour
2 tablespoons of olive oil
2 teaspoons of honey
1 teaspoon of salt
1 teaspoon of yeast


Put warm water (80 to 110°F) into a bowl. Add salt and honey and mix with a spoon. Add yeast, mix and let it sit for about 10 minutes
Gradually add flour and olive oil and start mixing
When the mixture gets too heavy to mix, start kneading the dough with your hands.
Knead the dough until you have a smooth ball. If the dough cracks it is too dry. Add water bit by bit until if forms a nice coherent ball. If your doug feels more like batter, it is too wet and you need to add flour bit by bit. If you need to add water or flour, do it by small amounts.
Coat the dough with olive oil, place it in a large bowl and cover it with kitchen wrap or a grocery bag. Let the doug rise for about an hour at room temperature, then push it down again so it deflates. Let it sit for about another hour. If you want to use it the next day, put it in a refrigerator.
Put the dough on a lightly floured surface, put a bit of flour on top and make it into the shape of a pie by stretching it out from the center outwards. Use a rolling pin until the dough is about 1/4" thick. Punch some holes in the dough with a fork to let the air escape while the pizza is in the oven.
NOW THE BEST PART!!!
PUT YOUR FAVORITE PIZZA SAUCE AND PIZZA TOPPINGS! and
Bake the pizza in you oven at 400 - 450° F for about 20 to 25 minutes until the crust is light brown.

Hola a todos !estas ultimas semanas he cocinado mucho y me siento tan feliz de ello, tuve una visita muy especial y no sabia k preparale para la cena y tenia muy poco tiempo asi que pensando decidi en hacer un pastel de atun, muy fresco y lo recomeindo mucho para esta temporada si lo acompañas con una ensalada es perfecto!

berries pie

I love old movies,love movies, and always want a piece of that berry pie that they make. Well I looked for an easy recipe and everyone compliments this. This is easy and very delicious with whipped cream. You can substitute the berries for 4 cups of mixed berries

Ingredients
•3/4 cup fresh strawberries, halved
•1-1/2 cups raspberries
•1 cup and 2 tablespoons fresh blueberries
•1/4 cup and 2 tablespoons white sugar
•2 tablespoons and 3/4 teaspoon cornstarch / corn flour
•3/4 recipe pastry for a medium pie

how to make it ?????

1.In a large mixing bowl, stir together sugar and cornstarch. Add strawberries, raspberries, and blueberries; gently toss until berries are coated. When using frozen fruit allow fruit mixture to stand for 15 to 30 minutes, or until fruit is partially thawed.
2.Line a medium pie plate with half of the pastry.
3.Stir berry mixture, and transfer to the crust lined pie plate.
4.Roll out the top crust and sprinkle with sugar, give it a quick roll with the rolling pin.
5.Top with second crust, and seal and crimp the edge. To prevent over browning, cover the edge of the pie with foil.
6.Bake at 375 degrees F (190 degrees C) for 25 minutes when using fresh fruit, 50 minutes for frozen fruit.
7.Remove foil. Bake for an additional 20 to 30 minutes, or until the top is golden. Cool on a wire rack.

SPINACH AND RICOTTA CANNELLONI!!!!



This is such a wonderfully light and super-tasty cannelloni, and again I've avoided making the frustrating, painstaking béchamel sauce and given you a much tastier and simpler version. All you need to make sure of is that you fill the cannelloni well with the ricotta and spinach mix, so it's not all full of air. And the lovely thing about it is that it goes crispy and golden on top, but remains soft and moist at the bottom. You'll love it!

INGREDIENTS
• 2 knobs of butter
olive oil
• 2 cloves of garlic, peeled and finely sliced
• a large handful of fresh marjoram or oregano, roughly chopped
• ¼ of a nutmeg, grated
• 8 large handfuls of spinach, thoroughly washed
• a handful of fresh basil, stalks chopped, leaves ripped
• 2 x 400g tins of good-quality plum tomatoes, chopped
• sea salt and freshly ground black pepper
• a pinch of sugar
400g crumbly ricotta cheese
• 2 handfuls of freshly grated Parmesan cheese
• 16 cannelloni tubes
200g mozzarella, broken up

for the white sauce
• 1 x 500ml tub of crème fraîche
• 3 anchovies, finely chopped
• 2 handfuls of freshly grated Parmesan cheese

HOW TO MAKE IT ???
Preheat the oven to 180ºC/350ºF/gas 4. Then find a metal baking tray or ovenproof dish that will fit the cannelloni in one layer so it's nice and snug. This way you'll get the right cover of sauce and the right amount of crispiness on top. When I cook this at home I just use one pan to cut down on lots of washing up! Take your metal tray or a saucepan, put it on a high heat and add your butter, a drizzle of olive oil, one of the sliced garlic cloves, a handful of marjoram or oregano and the grated nutmeg. By the time the pan is hot the garlic should be soft. Put as much spinach as will fit into the pan. Keep turning it over; it will wilt quickly so you will be able to keep adding more spinach until it's all in. Moisture will cook out of the spinach, which is fine. By cooking it this way you don't lose any of the nutrients that you would if boiling it in water.

After 5 minutes, put the spinach into a large bowl and leave to cool. Place the pan back on the heat, add a little olive oil, the other clove of sliced garlic, your basil stalks and the tomatoes, then fill one of the empty tomato tins with cold water and add this too. Bring to the boil, then turn the heat down, add a pinch of salt and pepper and the sugar, and simmer for about 10 minutes, until you get a loose tomato sauce consistency. Then take the pan off the heat and add the basil leaves.

By now the spinach will have cooled down, so squeeze any excess liquid out of it and pour this back into the bowl. Finely chop the spinach and put it back into the bowl. Mix it with the liquid, add the ricotta and a handful of the Parmesan, and then use a piping bag to squeeze the mixture into the cannelloni. You can make your own piping bag by getting a sandwich bag and putting the spinach mix into the corner of it. Then twist the bag up and cut the corner off. Carefully squeeze the filling into the cannelloni tubes so each one is filled right up – really easy.

Lay the cannelloni over the tomato sauce in the pan. Or you can pour the tomato sauce into your ovenproof dish and lay the cannelloni on top. To make the white sauce, mix together the crème fraîche, anchovies and the 2 handfuls of Parmesan with a little salt and pepper, then loosen with a little water until you can spoon it over the cannelloni. Drizzle with olive oil, sprinkle with the remaining Parmesan and the mozzarella pieces, and bake for about 20 to 25 minutes until golden and bubbling

Ale´s cake

I want to share with everyone my recipe of these delicious little cakes!!
They are really soft, creamy and simply amazing!

It is a good option for the family, to share with friends or nice to share with that special person in life.

Ingredients

TO MAKE THE CAKE
- one box of chocolate cake
- 2 tsp of vanilla

TO MAKE CHOCOLATE MOUSSE
1. 8 ounces chocolate
You can use bittersweet or semisweet chocolate, depending on how sweet you want your mousse to be. If you want to use bittersweet chocolate, you can always add sugar.

2. 4 eggs, separated
3. 2 tablespoons sugar (optional)
Pinch of salt (optional)

TO DECORATE
mascarpone cheese
- one bar of dark chocolate
- a few branches of peppermint
- a few dry cranberries

Instructions

TO MAKE CAKE

follow the instruccions like in the box.
add one tsp of vanilla
get it out the oven and leave it at room temperature.


TO MAKE MOUSSE
1.Use an electric mixer to whip the heavy cream until it forms soft peaks.
2.Melt the chocolate and butter together in a double boiler.
3.Beat the egg yolks well with a fork. Slowly add them to the chocolate mixture.

4.Add the vanilla and remove the mixture from the heat.
5.Add a scoop of the whipped cream to the chocolate mixture and stir it in.
6.Whip the egg whites and salt until they form stiff, white peaks.
7.The chocolate mixture should now be slightly warm, not hot. Fold the chocolate into the rest of the whipped cream.
8.Fold in the egg whites. Stop folding as soon as there are no longer any white lumps.
9. cut strips of aluminum and put it around the cake leaving 6cm, this will help to shape the chocolate mousse.add some of the mixture over the little cakes.
10.Refrigerate overnight, or until the mousse sets.


TO DECORATE
beat the mascarpone cheese till this looks like cream , put it on the top of the mousse and decorate with some zest of dark chocolate ,one cranberry and one leave of peppermint .

DONE.
