Caramel Banana Cream Pie



Days ago i found bananas for a really good price 4 lb for 1 dollar! and I said "oh I think I could make something with this.
So I started to think about a good recepie, yay!! caramel banana cream pie !
Let's go to make it!!


Caramel Banana Cream Pie

1 9-inch pie crust, prebaked (or you can make it)
3 bananas
2/3 cup sugar
3 tbsp water
2 tbsp butter
2 cups milk
3 tbsp cornstarch
1 large egg
2 tsp vanilla extract

Slice bananas into approx 1/4-inch thick slices and pile them into an even layer in the pie crust (a regular pie crust or a graham crust is fine).
In a medium saucepan over medium-high heat, combine sugar and water and cook until sugar is bubbling and has taken on a golden amber color, about 10 minutes (depending on the temperature of your stovetop). Add in butter. Sugar will sizzle, then butter will melt right in.
Working carefully, pour in 1 1/2 cups of the milk to the hot sugar mixture. The caramel will seize up, but will remelt fairly quickly. Stir occasionally to help caramel melt.
Meanwhile, whisk together remaining 1/2 cup milk, cornstarch and egg in a medium bowl. When the caramel has melted into the milk in the sauce pan, very gradually stream it into the cornstarch mixture, whisking constantly. Pour the mixture through a strainer and transfer the milk mixture back into the saucepan.
Continue to cook pudding over medium heat until it just comes to a boil. Cook for about 1 minute, stirring constantly. The pudding will thicken substantially. Whisk in vanilla extract.
Pour immediately over the sliced bananas in the pie crust. Chill in refrigerator until pudding is chilled and set, at least 2 hours.

Top with a layer of whipped cream (recipe below) before serving.

Serves 8-10

Sweetened Whipped Cream
1 cup heavy cream
1/4 cup confectioners’ sugar
1 tsp vanilla extract

In a large mixing bowl, whip heavy cream until it reaches soft peaks. Sift in confectioners sugar and beat to incorporate. Whisk in vanilla extract, then spread over the banana cream pie.

I want to share with everyone my recipe of these delicious little cakes!!
They are really soft, creamy and simply amazing!

It is a good option for the family, to share with friends or nice to share with that special person in life.

Ingredients

TO MAKE THE CAKE
- one box of chocolate cake
- 2 tsp of vanilla

TO MAKE CHOCOLATE MOUSSE
1. 8 ounces chocolate
You can use bittersweet or semisweet chocolate, depending on how sweet you want your mousse to be. If you want to use bittersweet chocolate, you can always add sugar.

2. 4 eggs, separated
3. 2 tablespoons sugar (optional)
Pinch of salt (optional)

TO DECORATE
mascarpone cheese
- one bar of dark chocolate
- a few branches of peppermint
- a few dry cranberries

Instructions

TO MAKE CAKE

follow the instruccions like in the box.
add one tsp of vanilla
get it out the oven and leave it at room temperature.


TO MAKE MOUSSE
1.Use an electric mixer to whip the heavy cream until it forms soft peaks.
2.Melt the chocolate and butter together in a double boiler.
3.Beat the egg yolks well with a fork. Slowly add them to the chocolate mixture.

4.Add the vanilla and remove the mixture from the heat.
5.Add a scoop of the whipped cream to the chocolate mixture and stir it in.
6.Whip the egg whites and salt until they form stiff, white peaks.
7.The chocolate mixture should now be slightly warm, not hot. Fold the chocolate into the rest of the whipped cream.
8.Fold in the egg whites. Stop folding as soon as there are no longer any white lumps.
9. cut strips of aluminum and put it around the cake leaving 6cm, this will help to shape the chocolate mousse.add some of the mixture over the little cakes.
10.Refrigerate overnight, or until the mousse sets.


TO DECORATE
beat the mascarpone cheese till this looks like cream , put it on the top of the mousse and decorate with some zest of dark chocolate ,one cranberry and one leave of peppermint .
